Keto Mock Mac and Cheese

This can be used as a side dish or the main dinner just by adding ham to this dish. Either way, it is delish. All the good of mac and cheese without all the carbs.
Recipe type: Side/Main Dish
Serves: 8 servings
  • 1 large head cauliflower (cooked and cut up in bite size pieces)
  • 1 cup unsweetened almond milk
  • ½ cup heavy cream
  • 2 bricks sharp cheese (cut up)
  • ½ cup shredded cheddar cheese
  • Salt and pepper to taste
  • ½ tsp. nutmeg (optional)
  • Cut up ham pieces (optional)
  • ¼ tsp. xanthan gum (optional, if needed)
  1. Wash and cut up cauliflower in bite-size pieces. Cook on the stove or in the microwave until fork tender. Drain and set aside.
  2. Whisk together almond milk and heavy cream in a saucepan over medium-high heat.
  3. Heat the milk and cream until bubbles form around the edges of the saucepan.
  4. Add cut up and shredded cheddar cheese, whisk together until melted completely.
  5. The sauce should be smooth and creamy.
  6. Add already cooked cauliflower and mix together.
  7. If the sauce is not thick enough you can try letting it set a few minutes and see if it thickens up.
  8. If it is still too loose, add a bit of xanthan gum. Place back on the stove and cook for a couple more minutes. Let sit again for a few minutes.
  9. Season to taste. Nutmeg is optional, but I think it gives it a little something extra.
  10. Mix in ham pieces if adding to the recipe.
