To Garlic or Not to Garlic

I took the idea for this recipe from a mashed potato recipe that I used to make for the holidays every year. My husband just LOVES garlic so making garlic mashed potato and then turning it into a garlic mashed cauliflower was really a no-brainer. If you don’t really care for garlic you could omit it and make this mash as is, without the garlic. It would still be just as delicious.

Say No to Potatoes

As you know, if you are on the keto diet or a low-carb diet, potatoes are just not an option. We needed an alternative that would satisfy that creamy mashed potato craving. You can put gravy on this and treat it just as you would any regular mashed potatoes. The bonus of this recipe is that you can make this right in your food processor. It is so simple and quick to just throw together at any time, not just for the holidays.

Ingredients

  • 1 head cauliflower about 4-5 cups cooked florets
  • 2 oz. cream cheese
  • 2 Tbsp. sour cream
  • 2 Tbsp. butter
  • 1 Tbsp. minced garlic or to taste
  • 1 tsp. garlic powder or to taste
  • ¼ cup parmesan cheese
  • salt to taste
  • black pepper to taste
  • Garnish with melted butter and minced garlic optional

Instructions

  • Cut up cauliflower into florets and cook until fork-tender.
  • Put the cooked cauliflower into a food processor and blend well.
  • Add the rest of the ingredients to the food processor and blend until fully incorporated.
  • Garnish with melted butter and minced garlic (optional)
