Slow Cooker Chicken Pumpkin Stew

This is a hearty pumpkin stew with chunks of chicken and cauliflower to warm you up on cold nights. Plus it is so easy just throw everything in the slow cooker and you're done. This can also be a vegetarian stew just by omitting the chicken or swapping it for vegetarian chicken.

Ingredients

  • 1 medium-large head of cauliflower washed and florets cut into bite-size pieces
  • 1 medium onion diced
  • 2 stalks celery diced
  • 3 cups chicken or vegetable stock
  • 15 oz. can pumpkin puree
  • 1 tsp. garlic minced
  • 1 tsp. nutmeg

Added at the end of cooking:

  • 1 ½ cups cooked chicken cut into bite-size pieces (you can replace with faux chicken to make this vegetarian)
  • ¼ cup heavy cream
  • salt to taste
  • black pepper to taste

Instructions

  • In a slow cooker add stock, pumpkin, and nutmeg and whisk together.
  • Add cut-up vegetables. Mix them together and push down into the liquid.
  • Cover and cook in a slow cooker
    on low for 5-6 hours, or high for 3-4 hours.
  • When finished cooking, remove the cover and add chicken, heavy cream, and season to taste with salt and pepper.

Notes

3-4 hours on high or 5-6 hours on low in a slow cooker.
The yield is about 7 - 8 cups of stew depending on how big your cauliflower head is.
