It is an easy recipe that takes no time at all to prepare and the fact that it is cooked in the slow cooker is a wonderful bonus. I love my slow cooker because it just makes cooking a meal so easy. I can throw it in and forget it until dinner time. Pair this with a veggie or a salad and dinner is done.
Be Safe With Your Slow Cooking
You should never put frozen chicken in a slow cooker. This is because it cooks at such a slow rate that bacteria have time to grow from frozen on the interior of the chicken. It makes not only an unsafe chicken, but it also can make it overcook on the exterior and undercook on the interior. So please always thaw your chicken completely before cooking in a slow cooker. You can, however, put frozen chicken in an instant pot. I know this because my mom has one and she is so excited that she can do that. Unfortunately, I do not have an instant pot yet, but I digress.
Why Chicken Thighs?
Why do I use chicken thighs? Thank you for asking. 😉 I use chicken thighs because it has more fat than chicken breasts and that makes it great for keto. Besides I do not like chicken breasts cooked in the slow cooker because it always comes out dry, but chicken thighs come out yummy and juicy. You should try to use bone-in when possible or it may dry out just like chicken breasts do.
Meal Prep Can Be So Easy
I usually make this on a Sunday. Not only for a quick and easy Sunday dinner but also for meal prep. This recipe calls for three pounds of chicken thighs, so take some of it and put it away. You can make quick lunches to have shredded on a salad or in a low carb bun as a buffalo ranch chicken sandwich. I love meals that I can make multiple things with and this is, for sure, one of those meals.

Slow Cooker Buffalo Ranch Chicken Thighs

Ingredients
- 3-4 lbs. bone-in chicken thighs about 8-10 thighs
- 4 Tbsp. butter melted
- 1/2 cup hot sauce
- 1 oz. packet ranch dressing and seasoning mix
Instructions

Put chicken thighs to the bottom of a slow cooker (crockpot).

Melt the butter in a microwave-safe bowl or melt on the stove and add to a medium-size bowl.

Add hot sauce and content of ranch dressing packet to melted butter and whisk together.

Pour over chicken thighs in the slow cooker. Make sure evenly dispersed over thighs.

Cook on low 4-5 hours or on high 3-4 hours, or until no longer pink inside.

Serve with a veggie, shredded on a salad, or in a low carb sandwich.
