90 Second Keto Bread

There is a lot of 90-second keto bread recipes out there, however, this one is a bit different. This one includes a bit of vital wheat gluten. I like vital wheat gluten because it does not add much in carbs and it makes bread taste more like real bread. This recipe is NOT gluten-free, so if you have problems with gluten this recipe will not work for you.

What??? How Can You Use Vital Wheat Gluten!!!!

Vital wheat gluten is fine for people on keto because it is low in carbs. So, unless you are allergic to wheat gluten or have celiac disease it is fine for keto. Vital wheat gluten is a protein that is in many vegetarian items such as seitan. We do not have gluten allergies so it works fine for our keto lifestyle. It adds to the recipes without adding a lot of carbs.   • 1 Tbsp. unsalted butter melted
  • 2 Tbsp. almond flour
  • 1 Tbsp. vital wheat gluten
  • ½ Tbsp. psyllium husk
  • 1 tsp. baking powder
  • ½ Tbsp. sour cream
  • 2 Tbsp. water
  • 1 egg
  • pinch of salt


  • Grease a square microwave-safe container with cooking spray.
  • Melt butter in the microwave, add the rest of the ingredients and mix together until well combined.
  • Heat in the microwave for 90 seconds.
  • Turn out onto a plate and let cool for a couple of minutes.
  • Cut in half to make two pieces of bread.
